Sodium Benzoate

Sodium Benzoate, also benzoate of soda, white crystalline or granular sodium salt of benzoic acid of formula C6H5COONa. It is soluble in water and slightly soluble in alcohol. The salt is antiseptic and has been used as a preservative in foods. In large quantities it is toxic, and federal law prohibits the use of more than 0.1 percent of the salt in foods. It has been used medicinally in making a test of liver function.
